San Marzano: Marcella Hazan’s favorite 🥫

Marcella Hazan changed the way Americans cook Italian food, and her 3-ingredient tomato sauce is proof that simplicity reigns supreme. Marcella built her cooking on a foundation of exceptional ingredients. As her husband Victor put it, “Marcella and I have depended on Gustiamo from its first day, to supply us with the basic ingredients of a good Italian table.”

When a recipe has only three ingredients, every single one matters. Mediocre tomatoes? Mediocre sauce. “Look for whole, peeled plum tomatoes of the San Marzano variety imported from Italy. They are the best kind to use and, if possible, settle for no other,” Marcella insisted in the introduction of her tomato + onion + butter sauce. DOP-certified San Marzano tomatoes from Gustarosso, of course.

We just received a shipment from Sarno and Gustarosso San Marzano tomatoes are finally fully in stock. So, in honor of Marcella, let’s cook like she taught us: open a can, add butter, onion, sea salt, and let time work its magic.

The fact that Marcella and Victor have been long time Gustiamo customers has been a huge source of pride for us. Cara Marcella, grazie for this precious recipe and endless cooking advice, grazie for turning the spotlight on good ingredients and honest food makers, grazie for your integrity. We miss you very much and we think of you in front of every pot of simmering sauce we make, hoping that you’d approve it.
